And, of course, we must overcome another tradition... the tradition of cinematographers: to show service workers, including us, trade workers, only from the bad side. Of course, we have some of them. But the team as a whole cannot be like that. Take our department store, for example. What a huge and well-coordinated team it is! How many wonderful girls we have, how many wonderful mothers and wives! How many of them are studying and achieving even better results! Our earnings are good now, we get no less than an engineer at the factory. And at the same time, there are still not enough sellers. People are afraid to go into trade. And why? Should they be afraid? I would like to make a documentary, artistic, educational film on this topic. A film analyzing our work, clearly showing its features and advantages.
What do you know about us? It is equally important to talk about us, catering workers, from the screen. Our restaurant employs several hundred people. We must arrange everything so that a person can have a good rest with us. In addition, we are thinking about how to help the hostess cook a delicious and quick lunch. Our restaurant has several cooking shops.
The work of a waiter! What do you know about him? How many kilometers do you think a waiter will measure per shift? We counted — more than twenty-five. And with a tray. And there are at least ten kilograms on the tray — plates, dishes, food. Kitchen table — one hundred kilograms. And you make thousands of flights a day. Everything is important here: politeness, tact, the ability to serve a dish, and the ability to "put an end" to the drinking of excessive guests in time. And how many and what kind of people will you not see in a day of work!?
And where are the educational, documentary films that tell about our work comprehensively? Cinematographers, along with our ordinary visitors, use the services of restaurants, cafes, canteens. But they should stay here longer, take a closer look at our work. The work of the cook, the work of the waiter, the work of the dishwasher. And in order for such paintings to help us attract public attention, they helped us mechanize complex manual processes — washing dishes, peeling vegetables, butchering meat, slicing cheese, sausages, and so on...
Catering is a large and important service sector. Probably, everyone will vote for women to spend a minimum of time preparing lunches, dinners, and breakfasts. And catering can help women in this. We want workers to gather more often in restaurants and cafes for the holidays, but for this, each restaurant should have more banquet halls — for ten people, fifty, and maybe rooms for five people. As a rule, we have one banquet hall and one common room. And the restaurant often resembles a train station.
What should restaurants and cafes look like in terms of design and architecture? I think cinematographers should conduct a film study on this topic with the participation of visitors, artists, architects, showing bad and good restaurants.
Cinema is the most convincing art, and therefore I was pleased that an article about us appeared in a special cinematographic magazine, The Art of Cinema magazine. Let this be just the beginning of the conversation. The sequel should be on the screen.
